Roasted Carrot Umami Butter
Roast Carrots, with garlic or onion, harissa (or chili flake), grain mustard, bay leaf, toss w little olive oil in glass dish, top w lager and bake 350 till beer is gone and bits are browning.
Process everything in blender with just enough olive oil to blend.
Use on it’s own, add to soup, great as substitute for sauce on pizza.

I roasted gold and orange carrots yesterday in lager and harissa - then whipped them with a bit of sharp olive oil. This morning I used as “sauce” for pizza with egg, arugula, and Parmesan. New breakfast fave.
